We ship our wines in lots of 2, 6 or 12 bottles to ensure they arrive safely, so please make up your order in multiples of 2, 6 or 12 bottles. Mixed packs of different wines are welcome.

Cabernet Sauvignon (100%), HILLTOPS
Season
The 2021/2022 growing season commenced with good spring rains, giving way to a temperate summer. Mild, cool conditions through to harvest yielded beautifully clean fruit and ripe tannins.
Viticulture
This Cabernet is grown by Peter Mullany and family on deep red granitic loam near Wombat in the Hilltops region of NSW.
Winemaking
Cabernet Sauvignon was destem and crushed in to small fermenters and gently worked during fermentation to extract tannin and flavour. The wine underwent malolactic fermentation and élevage in Allier and Tronçais oak before blending and bottling in Feb 2023.
Taste
Aromas of ripe dark fruits, cassis and cigar-box precede a palate of salted plum and dark chocolate woven around a firm tannin backbone.
